Ascension Cellars
Ascension Cellars is a boutique winery in Paso Robles, California, known for handcrafted Rhône and Bordeaux-style blends, emphasizing organic/sustainable grapes, minimal intervention, and aging in oak to let terroir shine, creating balanced and complex wines like their "Soul Shaker" and "Testament". Founded by Erick Allen, they focus on elevating the senses with wines reflecting French influences, using techniques like cold core fermentation for whites and long oak aging for reds, aiming for wines with personality, charm, and grace.
ERICK ALLEN
Erick Allen began his winemaking career in 1991, after a two-month long trip to France and to Italy. A love of Châteauneuf-du-Papes wines from the Rhône wine region in Southern France’s and Chianti wines from Tuscany framed his future. Upon Erick’s return he was telling a friend about his new found wine muse when she said, “if you love Rhône wines you should visit Paso Robles in California’s central coast where Rhône varietals thrive”. At that moment the die was cast.
